The Pasta Place in Lincoln closes due to pandemic, opens Say Cheese food truck

LINCOLN, Neb. (KOLN) – Another Lincoln restaurant is now closed for good after feeling the effects of the pandemic, but its owners have tapped into a new way to keep the people of Lincoln fed. They’re hoping this time around, it’ll last for years to come.

The Pasta Place has been up and running in the Havelock neighborhood for the past 2.5 years. That was until early April, when owners had to shut things down.

Brassicaceae such as broccoli, purple sprouting broccoli and romanesco, which are all nearing the end of their long winter season, contain a compound called sulforaphane that is believed to have myriad health benefits. According to NutritionFacts.org, “Cruciferous vegetables like broccoli can potentially prevent DNA damage and … activate defences against pathogens and pollutants.” To reap those nutritional benefits, however, it’s best to eat the whole plant, fresh or frozen, including its leaves and stalks. Peel and thinly slice the thickest stalks against the grain, then cook alongside the rest of the plant, or simply eat them as a crudite.

Thanks to generous donation from around the community, $336,665 were raised during the 11th annual FIND Food Bank Telethon Friday night. But the phone lines are still open until 11 p.m.

In a normal year, FIND Food Bank serves 90,000 individuals each month, but that number has increased to an average of 150,000 people monthly during the pandemic.

FIND distributed about 12 million pounds of food in 2019, and from January 2020 – December 2020, FIND distributed over 24 million pounds of food, equivalent to 22 million meals.

This recipe is spring in a bowl — joyful, green, fresh, bright and warm. It’s made with early-harvest vegetables — leeks, peas, new potatoes, spinach and herbs — and is simply seasoned so their delicate flavors come through clearly. The leeks and potatoes are simmered until tender in chicken or vegetable broth, but the rest of the vegetables and herbs are added shortly before serving so they cook just long enough to yield to the warmth of the broth but still remain fresh and bright.
